Seafood Curry

I tried cooking Seafood Curry by Delmonte Kitchenomics. It was delicious and economical. A unique blend of seafood cooking.

What you need:

8 cloves garlic, minced

1 medium (50 g) onion, sliced

1 Tbsp ginger strips

2 medium (300 g) potatoes, cut into chunks

200 g squid, ink sac removed then meat cut into 3 pcs

100 g shrimps, heads removed

½ k tahong (mussels), boiled and half shell removed

¾ cup thick coconut milk

1 Tbsp curry powder

1 can (234 g) DEL MONTE Fresh Cut Pineapple Chunks, drained

1 medium (50 g) red bell pepper, cut into strips

1. SAUTÉ garlic, onion and ginger in oil. Add potatoes, 1 tsp. iodized fine salt (or 1 Tbsp. iodized rock salt) and 1/4 tsp. pepper. Simmer for 10 minutes.

2.ADD squid, shrimps and tahong (instead of tahong, I used clams because I don’t like tahong). Simmer for 5 minutes. Add coconut milk, curry powder, DEL MONTE Fresh Cut Pineapple Chunks and bell pepper. Simmer for 5 minutes. Serve hot.
