Preparing lunch for my two kids in school is not an easy task. A lot of considerations have to be made. One is preparation time, nutritional value, taste, looks and availability of ingredients.
I prepare my kids lunch early in the morning so they can bring it with them by the time they leave for school. In planning their meal I try as much as possible to prepare a nutritious and balanced diet for the two growing kids.
I have to experiment a lot of variations just to attract their appetite. This morning I prepared something I called “Ground chicken in piña”.
500 grams ground chicken
1 can (234 g) Del Monte Fresh Cut Pineapple tidbits, drained (reserve syrup)
2 hardboiled eggs
1 pouch (200 g) Del Monte Sweet-Style Spaghetti Sauce
1tbsp. finely chopped onions
1 pc each red and green bell peppers cut in cubes
¼ tsp. Pepper
2 tbsp. soy sauce
How to do it:
Saute onion and ground chicken. Add soy sauce and pepper.
Add the drained pineapple syrup and let it simmer.
Add the pineapple tidbits, spaghetti sauce and the bell pepper.
Let it boil.
Garnish with sliced hard-boiled eggs.
